My rainbow loving heart is so excited about this one.
When Stephanie Fleming started her health Instagram, @iamhealthyandhappy, I was so inspired to re-focus on eating healthily. When she became a sponsor of Self Care September, I knew one of my habits needed to be centered around healthy eating.
At some point in our grade school days, we were all told to make our goals achievable and measurable. So eating X servings of fruit and Y servings of vegetables per day, while measurable, was NOT likely going to happen overnight. While “eat more fruits and vegetables” sounds much more attainable, it was not specific at all.
I decided to combine my love for color with my love for my health. My newest habit is to eat one fruit or vegetable from the colors of the rainbow each week.
Different colors mean different nutrients and different flavors. Different flavors means I will not get bored! It keeps it exciting.
I made a list, by color. of the fruits and vegetables that I LIKE (you’ll notice, I’m a little picky when it comes to vegetables).
Red: Apples, Cherries, Grapes, Strawberries, Red Peppers, Red Onions, Red Potatoes
Orange: Apricots, Cantaloupe, Nectarines, Oranges, Peaches, Carrots, Pumpkin, Sweet Potatoes
Yellow: Lemons, Yellow Pears, Pineapples, Butternut Squash, Summer Squash, Sweet Corn
Green: Apples, Grapes, Kiwi, Limes, Asparagus, Broccoli, Green Beans, Celery, Cucumbers, Lettuce, Peas, Green Peppers, Zucchini
Blue/Purple: Blackberries, Blueberries, Grapes, Plums, Eggplant, Purple Potatoes
